 This dish, Stir-Fried Pork with Cabbage, comes straight from my aunty’s recipe book in Hong Kong, where simple, everyday meals shine with flavor and balance.

When I visited her, I remember flipping through that worn, recipes book for daily Hong Kong dishes — practical, flavorful, and made from ingredients already in the kitchen. As a Chinese descendant, I realized how natural it felt; everything this recipe called for was already available in my home.

And once I tried it, I knew it was a keeper — quick, fragrant, and deeply satisfying. Paired with a bowl of warm steamed rice, it becomes a complete meal that feels both humble and special.

Stir-Fried Pork with Cabbage (洋白菜炒肉片)

A classic Hong Kong home-style dish combining juicy pork slices and crisp cabbage in a savory stir-fry.

Ingredients
  • 100g pork (shoulder or belly), thinly sliced

  • 400g Chinese cabbage, chopped

  • 10g ginger, sliced

  • 10g garlic, smashed

  • 3 tbsp water

  • ¾ tsp salt

  • ½ tsp sugar

  • 1 tsp soy sauce

  • 1 tsp cornstarch

  • 1 tsp Shaoxing wine (or dry sherry)

  • 4 tbsp oil

  • Optional: Wood ear mushrooms, soaked and sliced

Preparation Steps

1. Marinate the Pork
In a bowl, mix the sliced pork with soy sauce, cornstarch, and Shaoxing wine. Let it rest while preparing the vegetables.

2. Prepare the Vegetables
Wash and chop the cabbage into large bite-sized chunks. If using wood ear mushrooms, soak them in warm water until softened, then slice thinly.

3. Heat the Wok
Preheat your wok until hot, then add oil. Add the smashed garlic and sliced ginger, stir-fry until fragrant.

4. Stir-Fry the Pork
Add the marinated pork and stir-fry quickly over medium-high heat until the meat turns opaque and slightly golden.

5. Add Mushrooms & Seasonings
Toss in mushrooms (if using), salt, and sugar. Stir to mix well.

6. Add the Cabbage
Add the cabbage and stir-fry until it just softens but still keeps a bit of crunch. Splash in 2–3 tablespoons of water to help it steam lightly.

7. Serve Hot
Once everything is evenly coated and fragrant, plate it up. Serve immediately with a bowl of freshly cooked rice.
