A Refreshing Chilled Lobster From Old Calendar Recipe

Chilled Lobster Sashimi

Today’s recipe is one of those treasures: 冰镇大龙虾 (Chilled Lobster) or Lobster Sashimi (?!).
 
Will I ever cook this? I doubt it, but never say never. Just in case I ever lost the recipe again and if some of the reader are curious and want to try... thus, I share this recipe from my old calendar.
 

Chilled Lobster Recipe

Ingredients

  • 1 fresh live lobster

  • A few Sichuan peppercorns

  • 2–3 slices fresh ginger

  • A pinch of five-spice powder

  • 1–2 bay leaves

  • White peppercorns, to taste

  • Yellow rice wine

  • Light soy sauce

  • Sugar

  • Salt (more than you’d use in everyday cooking)

  • White liquor (such as Chinese baijiu)

  • Water (enough to cover the lobster)

  • Ice cubes

Method

  1. Wash the lobster and set aside.

  2. Heat oil in a pan, then fry peppercorns, ginger, five-spice powder, and bay leaves until fragrant. Add enough water to cover the lobster.

  3. Season with white peppercorns, yellow rice wine, soy sauce, sugar, salt, and a splash of white liquor. Let the broth come to a boil and taste—it should be noticeably salty with a gentle spice aroma.

  4. Bring to a boil, simmer briefly, then add the lobster.

  5. Cover and cook over high heat for about 15 minutes, then turn off the heat.

  6. Immediately transfer the lobster into ice water to lock in freshness and tenderness. Afterwards, return the lobster to the chilled broth, refrigerate, and let it soak for several hours to absorb all the flavors.

Serving Suggestion

Serve this chilled lobster as a centerpiece for a summer dinner, a festive family meal, or even a cozy weekend treat. It pairs beautifully with simple side dishes like stir-fried greens or a cold noodle salad.
