I found this version tucked away in an old recipe collection, and what I like the most about recipe it is how practical it is. It doesn’t ask for anything fancy: just a bit of minced beef, barley, and a few everyday vegetables. But when you bring them together in a pot, the result is something far greater than the sum of its parts—a broth that’s rich, wholesome, and satisfying.
Scotch Broth Recipe
Ingredients

200 g lean minced beef

1 litre water

1 medium carrot

1 medium potato

1 medium onion or leek

1 medium turnip
-
1 cabbage leaf

25 g pearl barley

1 tsp salt (or to taste)

Pepper, to taste

Fresh parsley, chopped
Method

Cook the beef – In a saucepan, place the minced beef with 125 ml of water. Season with salt and pepper, then simmer gently for 15 minutes.

Prepare the vegetables – Chop the carrot, potato, turnip, onion (or leek), and cabbage leaf into chunks.

Lightly chop – If you like a finer texture, pulse the vegetables briefly in a blender with a splash of water—just enough to chop, not puree.

Combine & simmer – Add the vegetables, pearl barley, and the remaining water to the beef. Simmer gently for 30 minutes until everything is tender and the broth has thickened slightly.

Finish with parsley – Adjust seasoning, then stir in freshly chopped parsley before serving.
Serving Suggestion
